As I mentioned to you I think you'd be surprised to find I bet you can find tenths or possibly more to shave off on the all seasons even as annoying as they are. Although by the looks of it you could use stickier tires. You can always learn more and more with the setup you have regardless if you are pushing at the tire limit. Trying different lines as you mentioned, etc. There are some places with FWD/all seasons where you want to take a different line or ease up so you don't plow and lose some time. Try a different alignment, turn in slower late and get on the power sooner is what I used to do in my Mazda3.
If you are serious about keeping the GTI to track for a bit here and there. Tires, cooling (radiator/intercooler), and brakes once you get tires. Other than that you could keep it reliable as is and have a blast for just HPDE!
