To follow up on No Man's Sky after having some time with it:
This really should've been an open beta. The developers over-sold and over-sold the game, demo'ing and promising features they hadn't built yet. Then Sony got involved and held them to their launch date (sort of) and the result was an unfinished product. That being said, I don't regret buying it. It feels like I am demoing the next generation of video games.
From what I've seen it looks like they plan to continue supporting this game and will be adding content and features. If they actually stick to their word, I think this game has the potential to be the new Minecraft. Back when that game was launched people didn't get what it was supposed to be and you couldn't really do much in it, now people have built entire cities in it, or functioning computers, somehow.
If they build on it to add the fully destructible worlds they originally promised, along with some sort of base-building elements, I think it'd really find it's stride as a chill exploration/building game.
