I 100% knew you wouldn't go american. Too much jap-crap runs in your blood, just don't make it like all the rest of your project threads (see: broken/never running/crashed) 
Nice pickup, pay attention to the recalls for rust to see if they can help (especially the front bumper/hood rust bubbles). The bed/tailgate is a foregone conclusion but looks like you already have a plan. That 5.7 is plenty flexible enough for your plans
