Hey guys 8)

This girl I've been dating is coming over tonight and we'll be making dinner together, having a quiet night since we've both been pretty busy with work.

Any of you guys really good at cooking? I'm okay, but I'm usually too lazy to put anything together myself (I eat out probably 70% of the time). Here's what I'm workin' with:

1) I don't eat red meat or poultry, but I do still eat fish and seafood to keep my protein levels up
2) She cannot eat shellfish as she's extremely allergic
3) She doesn't eat much pasta
4) I'd like it to be quick to make because she'll be heading here after work and will probably be hun-gar-y

I was thinking something along the lines of a soy-glazed salmon mixed up in an oriental stir-fry. What do you guys think? I found a pretty generic salmon stir fry recipe on the net, but nothing with an oriental soy glaze.

Any recommendations? We don't necessarily have to do a stir fry, I just thought it would be quick, easy and tasty.

Salmon stir fry would be OK, but Salmon is one of those fish that not everyone likes. I'd be more inclined to serve a lemon butter, say, haddock or similar, over rice with a side of steamed veggies. You could steam the rice w/ the veggies save some time, and the fish would not take long to prepare, just would take some time to make properly.

If you insist on fish.

When I hear shellfish, I think oysters. Does she eat shrimp? Fish can be effed up if you don't cook often.

You could try doing a salmon filet wrapped up with sliced red peppers, sliced leeks, some seasoning, and then wrapped in phyllo. Serve it with wild rice and a mixed green salad of sorts.

Its actually really easy to make and tastes really good.

Tuna Steaks with steamed veggies and garlic butter sauce.

Marinade the Tuna in olive oil with a little balsamic vinegar. Add pepper, oregano, and a little old bay lightly just let them chill in the fridge for 15 minutes or so. OR you could look up something on the internet so you can get at least the cook times for tuna.

Steam the veggies in dirty water. Basically you get the tap water to simmer with seasoning such as oregano, parsley, and pepper let the spices steep it gives the food flavor for when you put them in to steam they dont just taste like water!

Garlic butter sauce is easy just put in a little garlic salt/powder to a stick of butter. Add any other spice you want. You dont want the garlic to be over powering just a hint of flavor and you can use it on either the tuna or the veggies or both.

Stuffed Salmon would be my go at it. Look up a recipe, buy some nice salmon steaks, put it in there, broil it up. Grill some whole asparagus stalks and cook some grits to go with it...you've got a winner there.

mmmm..i may just have to fix what I described for myself tonight. It's got me really hungry here at work. You can substitute in mashed potatoes(the real kind) for grits if you dont like that. Preferably with some garlic thrown in for good measure.

To say the least. I don't know about the salmon, either. Go to the grocery store and see what kind of fish they have. If the lady likes steak or chicken she may appreciate a firmer, more "beeflike" fish like tuna, swordfish, etc. But if she normally eats fish, then salmon is probably ok too.

Grilled dolphin + rice and veggies? Kaan's tuna steak suggestion is good too.

Stir fried rice, veggies, and chicken is always good, easy, quick, and hard to mess up...you could always take the chicken out for you....or make some pasta, that goes well with wine

if you can make salmon or talapia cooked properly (look for recipies and cooking temps/times) with some veggies on the side (broccolli, corn, or whatever else you like) with a good butter sauce. BTW this is also quite healthy!

Yeah I've already cleared it in advance that she likes salmon, my problem is finding a place within a reasonable distance from here that has good fresh fish. Maybe I'll try Giant.

This is true. And surprisingly, so does Costco sometimes. I was extremely surprised with the quality of their filets and king crab legs the last time I was in there.
